How to prepare the Banana Bread Batter
- Preheat your oven at 375F or 175C.
- Mash the bananas with a fork, then add in the butter, egg, sugar and blend with a hand mixer until creamy. Now add in the vanilla extract and melted butter and blend more until combined.

- Sift in the self raising flour, then fold in until just combined. DONT OVER MIX

- Line a loaf pan with baking paper, this recipe is for a 9 x 3 inch loaf pan. Check the notes for multipliers on bigger loaf pans.

- Evenly spread the cake batter in the loaf pan and place in the middle rack of the oven. Baking time depends on your oven. I use a convection oven and it takes around 30-35 minutes to bake this banana bread. Make sure you use a wooden skew after 30 minutes, poke the banana bread in the centre of the pan. If the skew comes out dry, the banana bread is done.

Hi Peggy, did you test the recipe without success? I make this almost once a month and it turns out great. The key really is over ripe bananas and I mean dark sugary ones. They will add enough sweetness and moisture to compensate for processed sugar. If you don’t have over ripe bananas, pop them in the oven at 170c for 15 minutes and they will be sugary sweet. Are the photos or the recipe correct? The photo clearly shows sugar, but there’s no sugar listed. That seems to be an error, since the bananas alone really aren’t sweet enough.

This is the best banana bread recipe I have made. It was easy and I made it two days ago and it is gone! The only thing I would say is, it did not take 50 minutes in my oven to bake, it was more like 40 minutes. Great recipe. Thanks.
