Who doesn’t like a fudgy, sweet and rich Brownie? Well I sure as heck do, but they are full of sugar and flour so not the healthiest of treats in my recipe book. So when I feel like guilt free dessert, I reach for this recipe. There is literally zero sugar and flour and you can make it Vegan if you want by replacing the eggs.
Prepping this recipe is easy and you cant really go wrong making this. Here is how you can make healthy brownies.
Ingredients:
For an 8×8 inch or 20×20 cm baking pan, you will need the following:
- 1 Kilo or 2.2 pounds of Sweet potatoes, skinned and boiled soft
- 480 Grams or 2 cups of Greek Yoghurt
- 360 Grams or 1 1/2 Cups of Ripe Mashed Bananas
- 130 Grams or 1 1/4 Cups of Cocoa Powder (unsweetened obviously 😛 )
- 210 Grams or 2 Cups of Oat Flour or fine ground oats
- 3 Large Eggs, replace with flax seed meal for a vegan version
- 1 1/2 Teaspoons of Vanilla Extract
- 1 1/2 Teaspoons of Baking Powder
- 1 Teaspoon of Salt
- 200 Grams or 1 1/4 Cups of Dark Chocolate Chips
How to make Healthy Brownies:
The process couldn’t be more simple, here is what you need to do:
- Skin the potatoes and cut them into small cubes, add water to a pot so they are well covered and boil at medium high heat until they are soft enough to mash.
- While the sweet potatoes are boiling, grind up your oats and lightly whisk in the baking powder and salt.
- Now that the sweet potatoes are ready, mash them up and add in the yoghurt, mashed bananas and vanilla extract. Combine well.
- For the final step, add in the dry ingridients from step 2 and the cocoa powder. Whisk or fold until combined.
- Last but not least, fold in the chocolate chips.
- Line an 8×8 inch baking pan with baking paper, pour the batter in and flatten with the back of a spoon or spatula.
- Bake for 35 minutes and do a tooth pick test to ensure the centre is coooked.
- Let cool before cutting, best enjoyed with some berries.
And thats it, no magic or difficult processes.
Vegan Version
This recipe is “almost” vegan so if you want to go full Vegan simply use the following substitudes:
Replace the Eggs with Flax Seeds with the following method: Add 3 tablespoons of flax seeds and 9 tablespoons of water in a bowl and let it sit for 5 minutes. Then add into the batter.
Replace the Greek Yoghurt 1:1 with Avocado, Vegan Yoghurt or Coconut Cream
